Homemade Lemon Curd

Spread the joy with homemade lemon curd topped with meringue kisses! Students will learn the art of preparing delicious homemade lemon curd and meringue kisses which can be used on shortbread cookies, puff pastry shells, on meringue cookies, in between cakes or by the spoonfull.

Lyvier Conss has over 20 years of experience working with confectionery delights. She has mastered the essential skills of the trade, including tempering, dipping, molding, decorating and sculpting, and creating recipes to incorporate into truffles, bonbons and cakes. She is always taking new baking and confectionery courses to improve her knowledge of preparing the sweets of the world, and loves sharing her recipes and techniques with others.

Grown-up Grilled Cheese

We all grew up with this timeless classic sandwich; this class takes it to the next level! Each participant will make four different grilled cheese sandwiches that appeal to grown-up tastes. The class will feature ingredients that will bring the class to new and uncharted territory that will offer something for every taste. We will also discuss the best cheeses and bread combinations and tips on the best cooking techniques. Enjoy a sandwich with the group and discuss, and you will have three more sandwiches to bring home! Your class fee includes all supplies and materials...just bring your appetite and taste for something new and exciting!

Wally Rande is both a culinary school graduate and a culinary school chef instructor, with over 12 years of experience managing commercial kitchens and working as a chef in restaurants. He has taught for over 30 years in the renowned School of Hotel & Restaurant Management at Northern Arizona University. As an Associate Professor he has developed and taught classes in management, leadership, customer service, tourism, human resources, cooking, and beverages. He has multiple degrees in Educational Leadership, an MBA, Hospitality Business and Culinary Arts. He has also certifications as a Level 1 Wine Sommelier, and Level 1 Beer Cicerone.

Baking at High Altitude

Come learn how to make delicious, healthy, and beautiful baked goods at high altitude!  We will break into groups, and participants will practice making their own cookies while experimenting with different ingredients and techniques for reducing sugar, using whole grains, and how to try new substitutions. While this class focuses on cookies, you will gain valuable tips to increase the nutrient value of all of your homemade baked goods.

You will need to bring your own cookie baking sheet. Tanya uses an air-insulated cookie sheet and recommends them for this class. You can find them for around $17 and up. Otherwise a light-colored aluminum sheet that is not a non-stick is suggested. 

Instructor Tanya Tweed is a Registered Dietitian Nutritionist (RDN) specializing in acute care clinical nutrition. She has a Master of Science degree in Dietetics and has also worked in food service management in her role as a dietitian. She has been baking in Flagstaff for over 30 years.
